Tree-O is a 9.05% ABV wild fermentation ale from The Ale Apothecary, produced in very limited batches—only 297 bottles of this particular iteration were produced and bottled on November 5th, 2018. This unique brew began as a project in 2015, aged in upright brandy barrels with figs and plums, and later racked into wine barrels for further fermentation. The beer ultimately underwent bottle conditioning with fig juice, resulting in a complex, fruit-forward character alongside the nuanced tartness characteristic of wild ales. The label artwork features a detailed etching-style illustration of a silver surgical tool alongside a stylized fish, set against a vintage-inspired dark background, suggestive of an old apothecary label.
The beer’s ingredients prominently include figs, plums, fig juice, and fir needles, all contributing to its distinctive, terroir-driven flavor. Described as a “Government Warning,” the label states the beer is a product of The Ale Apothecary based in Bend, Oregon.
